Pursuit of Yummy Healthy Breakfast

IMG_3737If you follow me on Instagram, you may have noticed that I post a whole lot of smoothie pictures. Smoothies are one of my go-to things to eat for breakfast. They are wonderful because they jam pack tons of really good, nutrient rich things into a yummy drink. So, I am going to give you one of my favorite smoothie recipes. (Though, I do change it up depending on my mood and what I have in the fridge. This is my ideal smoothie for when I have a long day ahead.)


one cup of water or coconut water if you prefer

Water for an easier blend, and because its always good for you. 

one chopped medium sized beet

Beets because: oxygenate blood, alkaline, stimulates liver function, antioxidants, it also gives the smoothie a BEAUTIFUL color, and the taste is oh so yummy.

a tablespoon of coconut oil

Coconut Oil because: normalize blood sugar, reduce adrenal work, increases energy, digestion aid, and helps keep you full

two (packed) cups of spinach, or one packed cup of kale

Spinach because: youthful skin, healthy blood, calcium, iron

Kale because: protein, copper, iron, antioxidants, anti-aging compounds, anti-cancer, anti-inflammation, fiber

one half of an avocado

Avocados because: amino acids, healthy monounsaturated fats and blend

one cup of frozen strawberries

Strawberries because: antioxidants, vitamin C and taste

one tablespoon of chia seeds

Chia Seeds because: helps maintain weight, aids in toning, stabilizes blood sugar, protein, omega-3′s, antioxidants. builds strong bones

one tablespoon of lemon juice

Lemon juice because: blemish-free skin, digestion aid, alkaline, cleanses body

two fistfuls of walnuts

Walnuts because: they blend easily, cancer-fighting properties, antioxidants, amino acids, brain health, protein

and a teaspoon of bee pollen

Bee Pollen because: energy enhancer, protein, B vitamins, amino acids, skin soother, digestive aid, allergy treater, immune booster, and cardiovascular support

This drink will take some prep time (the beet alone will take a little time to chop), so consider that before you decide to whip this up for breakfast. Often times I make a couple of smoothies at night to last me a couple of days. Its especially helpful to have them remade when I’m having a rushed morning.

Sometimes I don’t just have this bad boy as a drink. Sometimes I make a smoothie bowl out of it. Simply add some oats to top it off, and maybe some fresh banana slices, and you have yourself a bowl.

Pursuit of Fashion

IMG_3818 (1)This outfit came together so perfectly. Neutrals are always easy to mix together, and always look classy. (You can guarantee this outfit will be repeated in the near future.)

The best part? This outfit cost me a little less than $40 all together. (excluding the purse and watch) AND I will be able to mix and match these pieces over and over again.

Yes, that is a butterfly! I have always wanted to hold one! I got to cross that one off my bucket list yesterday in Winter Park with my little sister, Jillian.  We happily came across the Winter Park Farmer’s Market after visiting the Rifle Paper Annual Sidewalk Sale. There were all sorts of goodies there, including this friendly butterfly.

Although I didn’t include this bag in my price breakdown, I have to say, it really does add a special touch to the outfit.

IMG_3811I am quite in love with this little beauty. I stumbled across it in an antique shop in Jacksonville. Its the perfect little bag to take anywhere. (Just ignore the part where it’s stuffed to the brim and bulging out!)

Pursuit of Better Mornings

Tips and Tricks to Make Your Monday Morning Better


#1 Figure out what wakes you up. It may be washing your face, a cup of tea, or jumping in the shower. For me, its a giant cup of coffee. Do whatever wakes you up first! This will kickstart your morning.


#2 Give your body a good stretch. It could be a simple stretch while still laying in bed,  or a full blown yoga session. Waking up your body is so important, it will make you feel better overall.  I usually start by wiggling my toes and stretch my body parts all the way up to my neck. This is a step in my morning routine that I try not to forget. It is the worst feeling when I skip out on this, and I get in the car ready for work, but I am still stiff from my night’s sleep. No good. Must stretch.

IMG_0385#3 Pick out your outfit the night before. I know, its annoying. But trust me, it will feel so much easier in the morning. I usually only leave myself a certain amount of time to get ready in the morning before I have to head out. If I struggle with what to wear, my whole morning is thrown off. Then comes the stress, the last thing you want Monday morning. Go ahead, Sunday night, take the time to pick out your outfit. You may even want to try it on to make sure it works ahead of time.

#4 Give gratitude. Pause. Take a moment and recognize the many blessings you have in your life. Think of all the lovely people that make your life good. What are you grateful for? Find your inner calm and peace.  On a stressful Monday morning, it is worth dedicating one minute. This could change your mind frame for the rest of the week.


#5 Eat a filling breakfast. Don’t skip breakfast! Seriously. You need the nutrients to recharge your brain and your body. Think about that. The food you eat is your fuel for the day. Would you want to start your tank on empty? Likewise, would you want to start your tank on gross deep fried fatty drive-thru food? I would hope not. If you tend to run out of time like I do in the morning, I find that pre-making nutrient rich smoothies is a huge help. All I have to do is grab from the fridge and shake it up. I can even drink my breakfast in the car.

The morning is your time is your time to prep yourself for the day. Make it beautiful.

Pursuit of Exploration

Jason and I recently went on vacation to St. Augustine and Jacksonville for our (almost!) two year anniversary, and it was amazing! We had so much fun, and took way too many pictures. I wanted to put it all together to have something to remember this trip by, so I made this video, and I thought I would share it!

Stay in a B&B, there are many lovely ones in town. It is the most authentic way to experience St. Augustine.  If you’re looking for a good one, we stayed at Casa de Solana and it was absolutely wonderful.

Pursuit of Cute Easy Outfit

Okay okay, one more outfit with my bow pants will grace Everlasting Pursuits.

I just can’t stop wearing them, okay?

IMG_3707I just had to pair this adorable scooter print blouse with these paper bag pants. This outfit makes me feel a little Audrey Hepburn and a little bit quirky all at the same time.

This was a great outfit for our vacation because both pieces were light enough for me to walk around St. Augustine in the Summer. But I could still feel tailored and stylish while being a bit of a tourist.

IMG_3680I paired this outfit with some great backless flats I recently found at Aldo for $30! A simple ponytail and some sunnies, and my outfit was complete.

Pursuit of Reaching Beyond the Square


I have had this urge lately to expose truth, so I am about to confess a little bit here. Something is not right, and I feel like I can’t continue blogging until I come clean. The blogging community is beautiful, and wonderfully interconnected, and I appreciate every blogger and social media guru that I have met along my journey with Everlasting Pursuits. But, we have a secret.

We are NOT perfect. There is much more to see beyond the square that is Instagram. And there is more to life than what is included in a blog post.

Of course, on social media, we only expose the good. That goes for everyone. You aren’t going to post a picture of your bad hair day, you’re going to to post a picture of the good one. We want to expose our community to the photos that highlight our best selves. Unfortunately that carries some negativity to it too.

If you only see the best of your social media communities, when you are not at your best, you may start to feel guilt or frustration… that your life is not as good as the ones you’re surrounded by. Your life is not picture perfect. It seems like so-and-so has their life so put together, and yours is just not. But in reality, we don’t see beyond the square. We don’t know their full lives.

Here comes confession time, because I am not going to go on pretending that my life is as perfect as it seems to be online. No one is perfect, so I am going to expose some of my flaws in this post. While I don’t want to sit here and list all of my flaws (because that might damage my mental health haha), I will post a couple that I think are relevant to my blog and social media outlets.

Confession #1: So many people always ask how I have the effort to put together a cute outfit every day, or polish myself the way I do on a daily basis. The truth is, it is not all sunshines and daisies. I will admit. I have outfit anxiety, and often. If I am going to be in a new social setting, I get extremely frustrated and anxious about what I am wearing. I actually have this problem where I don’t really know how to dress “casual” and cute. I am working on it, okay? Really though, most of my life I am either working, adventuring alone, or with Jason. All of those situations allow me to dress up the way I would like, I am confident there. But, if I am going somewhere that would require me to dress casual, I stress. MAJORLY. Jason and I have even gotten into arguments because of how stressed I get, and no matter what he says, nothing can help me when I am in those kinds of moods. It’s miserable. Really.

This brings me to Confession #2: I post a lot of things about my relationship. I am majorly in love with Jason, there is no hiding or denying it.. But we get this question all the time, “Is your relationship really that perfect?” Well, while we love each other and we are happy, we do have our moments. Yes, we have had fights. Yes, we bicker. No, we are not ALWAYS googley eyed over each other. But, with that being said, we are incredibly happy together. And I will say that I have never felt this way about another human, and I never want to loose the special bond we have with each other. But no, we are not perfect. Who is?

Beyond these two major confessions, I will admit that my house is not always clean, I don’t always make beautiful meals, we don’t always have fresh flowers in our house, my job is not just playing dress up, BUT our cats ARE always cute.

I guess my point of all of this is to encourage everyone to try to look beyond the square. Enjoy the beautiful things that the blogging community has to offer, but take it with a grain of salt. No one is perfect, everyone has struggles of their own.
